Ask a Himachali orchard family which apple they keep back for the house, and a surprising number will say Golden. It's rarely the one people order first.
Golden Delicious wasn't bred in a laboratory. It was found — a chance seedling on a West Virginia farm in the 1890s, kept because someone tasted it and thought it worth keeping. Despite the name it has no relation to Red Delicious at all.
It now grows across Himachal Pradesh, Jammu & Kashmir and Uttarakhand, and on our hillsides it has the longest season of anything we pick.
What it actually tastes like
Honeyed, is the word most people reach for. Golden has very low acidity, so there's nothing sharp cutting across the sweetness — and a faint floral quality that no other apple we grow quite has.
The texture is softer than Fuji or Royal Delicious. Less of a snap, more of a yield. Some people prefer that; others want the crunch. It's the one genuine dividing line with this apple.
Why you rarely get a good one in a shop
Golden's skin is noticeably thinner than most varieties. That's exactly what makes it pleasant to eat: nothing tough between you and the flesh.
It's also why it bruises easily. A Golden that has been handled through a mandi, a warehouse, a distributor and a shop display has usually taken a beating — and it shows as soft patches and dull skin. So shops stock less of it, and what they do stock is often picked early and hard to compensate.
Bought close to the source, it's a completely different fruit. That's not marketing — it's just what happens when you remove four sets of hands from the journey.

The apple for the very young and the very old
In hill households, Golden is what gets given to a small child or an elderly grandparent, and the reasons are practical: soft flesh, thin skin, almost no acidity, nothing sharp.
Steamed and mashed, it's often among the first fruits an infant is given. It's also the apple most likely to be finished by someone who says they don't much like apples.
Early or late season?
Golden runs July to October. Early fruit is crisper and slightly tart; late-season Golden, from September and October, is softer and much sweeter. If you like a firmer apple, order early. If you want the honeyed version, wait for autumn.
What to do with it
- Eaten fresh — as it's meant to be. It needs nothing
- Apple sauce — breaks down beautifully and needs little or no added sugar
- Apple halwa — the low acidity suits ghee and cardamom perfectly
- For babies — steamed and mashed, no sugar required
- Not for pies — slices collapse. Use Granny Smith when shape matters
Keeping them well
Golden is the shortest keeper in a mixed box — around two weeks in a cool, dark place, three to four in a fridge drawer. Fuji and Granny Smith will outlast it comfortably.
So if your box has several varieties, eat the Golden first. Keep them cool and dark, don't wash until you eat, and keep them away from bananas.
